Before cooking you prepare the ham the way our great-grandparents did by soaking and thawing in water overnight. This will draw out the salt and keep the ham moist during cooking. You will not believe the taste.
Pigs are a small herd born and raised slowly through our forest delivering excellent animal welfare. We farm without the aid of chemical intervention on the land , our animals or the finished meat products.
Our animals are free of artificial chemicals and antibiotics the meat is full of natural antioxidants and vitamins resulting from browsing the wild herbs and shrubs the natural forest provides.
All animals are humanly butchered and cured in an independently owned certified local abattoir. We insist in supporting local business where possible.
